Every week we bring you a taste bud-tingling, saliva-inducing recipe for you to feast your eyes (and stomachs) on.
This afternoon we’re bringing you something that is both delicious and good for you (in other words, it’s the perfect treat).
We give you the recipe for Zesty Orange and Dark Chocolate Scones, courtesy of The Wonky Spatula…
(Makes 6 large scones)
Ingredients:
- 225g of almond flour
- 1 teaspoon of baking soda
- 3 squares of 85% dark chocolate, finely chopped
- Zest of a large orange, finely chopped
- 3-4 tablespoons of freshly squeezed orange juice
- 4 tablespoons of Agave nectar, honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla essence
Method:
1. Pre-heat your oven to 180 degrees Celsius/ 356 Fahrenheit.
2. In a large bowl combine the almond flour, baking soda, dark chocolate and orange zest.
3. In another bowl whisk the eggs and combine the rest of the liquids.
4. Mix both sets of ingredients together.
5. Using a large metal spoon separate the dough, roll into small balls and place on a parchment lined baking tray, using your fingers gently press down on each scone.
6. Place in the oven for 25 minutes or until the scones are a lovely golden brown.
7. Remove from the oven and place on a wire rack to cool.
8. Enjoy slightly warm with one of the following serving suggestions.
Serving suggestions:
1. Sandwich together two mini scones with a good helping of dairyfree ice-cream nobó.
2. Refrigerate a tin of coconut milk for a few hours, carefully open it up scoop out the delicious cream (discard the water), whip it for a few minutes with 1/2 tsp of vanilla essence, smother the cream over your scone and garnish with some mint leaves.
