This week, it’s homemade Apple Pie courtesy of Rebecca’s mum…
Ingredients:
Filling:
4-5 large cooking apples peeled and cut into large chunks
3 oz caster sugar
2-3 tablespoons water
Pastry:
12 oz self-raising flour
6 oz hard margarine (cut into cubes)
3 oz granulated sugar
1 large egg (beaten)
2-3 tablespoons cold water
Method:
1. Put the water, sugar and cubed apples in a saucepan. Bring to the boil and gently simmer for approximately 10 minutes until the apple is soft but still formed.
2. Taste and add more sugar if required (depending on your sweet tooth). Leave to cool.
3. Sieve flour into a large bowl, add margarine and rub ingredients together until it forms breadcrumbs. Stir in sugar.
4. Add beaten egg and mix together with knife. Gradually add water until mixture comes together to form a dough. Knead lightly and place in fridge to rest for 30 minutes.
5. Grease a large plate (about 25 cms) with margarine and preheat your oven to 150 degrees (fan oven).
6. Cut dough in half and roll out on floured surface, in a circle to line plate. Brush rim of pastry with water and add filling.
7. Roll out other half of dough to cover and trim the edges. Crimp edges of pie together, prick the top of the pie several times with fork, brush with beaten egg and cook in preheated oven for 20-25 mins until golden brown on top.
