The sun is shining, the BBQ is sizzling… all you need now is the sweet treat to follow. We’ve mentioned once or twice on site that we’re big chocolate fans in Her.ie Towers, so in celebration of those of your sweet tooth, should you have one, we have this delicious recipe for mouth-watering Rocky Road treats from our pals at Skelligs Chocolate. (Please note, if you make these, it’s only fair to make some for us too.)

Ingredients:
Skelligs Chocolate Chocolatey Rocky Road
500g of Skelligs milk chocolate drops
250g of Skelligs white chocolate drops (for decorating)
1 can of condensed milk (397 grams)
1 tsp of vanilla extract
170 g of marshmallows (large or mini)
150g of mixed nuts (we use brazil, almonds and hazelnuts)
150g of honeycomb (mash up / crumble crunchies)
110g of crushed biscuits (a mix of digestive & rich tea)
Equipment:
2 x Saucepans
1 x Pyrex bowl for the saucepan
1 x spatula
1 x large wooden spoon
1 x tray (8 inches by 6 inches)
1 x greaseproof paper for lining (can use cling film or parchment paper)
1 x knife
1 x tin opener (for condensed milk)
Method
1. Pour the condensed milk into a saucepan with the chocolate drops (if using bars break up into small pieces to aid quicker melting) and add the tsp of vanilla extract.
2. Stir until all the chocolate has melted.
3. In a bowl add the other ingredients, the marshmallows, mixed nuts, honeycomb and biscuits and stir.
4. When the chocolate and condensed milk is ready add half of the saucepan to the bowl and mix, then add the rest. Stir until well mixed.
5. Take your tray, line it with greaseproof paper, and then pour the mixture onto it.
6. Take the spatula and smooth it around and flatten it out.
7. Place in the fridge for at least an hour to set.
8. When ready remove from the fridge.
9. Melt the white chocolate in the Pyrex bowl using it as a Bain Marie (don’t let the water touch the chocolate)
10. When melted pour over the tray, this will set quickly as the mixture is cold from the fridge.
11. Decorate with nuts or designs in the chocolate.
12. Allow to cool in the fridge (again) till set.
13. To remove from the tray, run the knife around the edges, turn over the tray and turn it back again onto the kitchen counter. Cut the Rocky Road with a strong knife and bring it to your next barbecue!
