Feel Good Recipe: Baked Haddock with Cheese and Mustard Sauce

Here’s a simple recipe for some delicious melt in the mouth cheese burgers!

Prep time: 15 min

Cooking time: 40 min

Serves 4

What you’ll need:

30g butter, plus a little extra
30g plain flour
300ml skimmed milk
2tsp Dijon mustard
75g Kerry Low Low cheese, grated, plus a little extra
4 x 150g smoked haddock fillets
250g baby leaf spinach
Nutmeg
4 sprigs cherry tomatoes on the vine
Olive oil

What to do:

1 Preheat the oven to 200C (180C fan oven) gas mark 6. Melt the butter in a pan, add the flour and stir together. Cook for 1-2min – any less and the sauce will taste floury.

2 Take the pan off the heat and slowly add the milk, stirring all the time to make a smooth sauce. Put the pan back on the heat and bring to the boil. Simmer for 2-3min. Season well with salt and freshly ground black pepper then stir in the mustard and cheese.

3 Wash the spinach, then put in a pan with a knob of butter. Cover, bring to the boil and cook until just wilted. Season well and add freshly grated nutmeg to taste.

4 Spoon the spinach into an ovenproof dish. Add the haddock, then spoon over the sauce. Season and grate over a little more cheese

5 Put the tomatoes in a roasting tin and drizzle with oil and season. Cook for 30min.

6 After 10min, put the haddock in the oven and continue to cook for 20min.
