Mmm, let’s go bananas!
We’re going to spend the evening stuffing our faces with everything we’ve been starving ourselves of over Lent anyway, so why not do it in style?
Bananas are nutritious, delicious and is a major slimming superfood. The fruit is loaded with resistant starch, a healthy carbohydrate that fills you up and helps to boost your metabolism.
Whether it’s an evening snack for today or a nutritious bite for the office desk during the week, you really can’t go wrong with baked banana oatmeal…
Tip: These can be made in advance and kept in a Tupperware box for work during the week. As a breakfast option, you’re combining hearty oats with a sweet banana for a delicious and satisfying morning meal.
This recipe will make two servings.
Ingredients
1 cup old-fashioned oats
2 tbsp brown sugar
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp chia seeds (optional but are a great energy booster)
1/2 cup chopped walnuts
1 cup almond milk
1 tsp vanilla extract
1 banana

Method
Preheat oven to 170 degrees Celsius.
Combine all ingredients (except for the banana) in a mixing bowl.
Coat a loaf pan with non-stick cooking spray.
Pour oatmeal batter into pan and spread evenly with a spatula.
Slice banana and place on top of oatmeal batter.
Bake for 30 minutes or until top is lightly browned.
Allow to cool before cutting.
