Lunch Inspiration – Vote for Your Favourite and Submit Your Own!

Health eating doesn’t have to mean denying yourself a delicious lunch! 

Our friends at Jacob’s have just launched a delicious range of new Rice Cakes in  four tempting flavours – natural, salted, milk chocolate and dark chocolate.

The range is gluten free, contains no added colours or preservatives and is a good source of fibre. Starting at only 19 calories per rice cake, there’s no need to feel guilty about snacking.

But how would you eat yours? To celebrate the launch of the new Jacob’s Rice Cakes, we’re asking you to send in your favourite recipe suggestions.

The winner of last week’s voting poll is Lucienne Treyvaud with this recipe: Finely diced red onion, tomato, green apple and fresh crab meat tossed in olive oil and spooned on top of salted Jacob’s crackers. She won by 5 votes only!

Each week, we’ll take two recipes and set them head to head for our readers to vote for their favourites.

We’ll put the weekly winners through to a grand taste test, and our overall winner will be the lucky recipient of a pamper at Buff Day Spa.

We want to know which of this week’s tasty treats you’d rather opt for at lunch time.

Will you opt Michelle Duong’s ? Top off a dark chocolate cracker with some freshly whipped cream and add some juicy strawberries with plump mango slices with a mint leaf to garnish. You can also be a bit bold and drizzle some caramel on top to give it some extra sweetness.

Or Naomi Davis’ recipe idea for avocado, salsa and coriander? All you need is four cloves of garlic, two large tomatoes that are de-seeded and chopped. Half onion, one bunch of coriander chopped, a pinch of salt and a squeeze of lemon juice. For the avocado mix; two ripe avocados mashed up and a couple of tablespoons of the salsa to mix together.
