Mexican Mealtimes – How To Cook the Perfect Fajitas

Heat up your autumn nights, then cool down with a Corona

Spicy foods are the perfect choice for these chilly autumn nights, and they’re all the better when they’re washed down with an ice-cold beer. Corona Ireland are giving you the chance to enjoy that beer on a beautiful beach in a great competition, but for now we’ve paired up with Corona to bring you a series of the best Tex Mex recipes, tasty treats that are sure to have you feeling the love at the dinner table! Next up, some classic chicken fajitas.

INGREDIENTS

  • 8 flour tortillas
  • 2 tbsp olive oil
  • 4 chicken breasts, cut into strips
  • 1 tsp hot chilli powder
  • 1 tsp ground cumin
  • 2 onion, chopped
  • 2 cloves garlic, grushed
  • 1 red pepper, 1 green pepper, 1 yellow pepper, sliced
  • 400g tin of chopped tomatoes

METHOD

1. Heat olive oil in a large pan. Add onions and garlic and fry for 2-3 minutes. 

2. Add chicken to pan and quickly brown. 

3. Add chili powder and cumin and cook for another two minutes.

4. Add the sliced peppers and cook on a low heat until the peppers have softened slightly. 

5. Finally, add the chopped tomatoes, cover and simmer for 10-12 minutes. 

 

Serve with warmed tortillas, sour cream and guacamole, along with an ice-cold Corona, and hey presto – you’ve got the perfect Tex Mex night in!
