Recipe: Scrumptious Chocolate Coconut Squares

We’ve got a great recipe for you for scrumptious Chocolate Coconut Squares, a delicious dessert after dinner or a tasty treat throughout the day.

Recipe

Makes 20

Ingredients:

  • 3 eggs
  • 250g Siúcra Granulated Sugar
  • 150g plain flour 
  • 20g cocoa powder
  • 4g baking powder
  • 100ml water
  • 100g butter or margarine

Coconut paste:

  • 75g butter or margarine
  • 125g desiccated coconut
  • 150g Siúcra Icing Sugar
  • 2 small eggs

Method:

  1. Grease a small baking pan (about 20 x 30 cm) and sprinkle with flour.
  2. Beat the eggs and sugar until fluffy.
  3. Combine the flour, baking powder and cocoa powder and stir into the mixture.
  4. Bring the water and butter/margarine to the boil and add the chocolate mixture. Pour the mixture into the tin and bake in the lower part of the oven for 20 minutes at 200°C. 
  5. Combine all the ingredients for the coconut paste in a saucepan and simmer until the paste thickens, stirring constantly. 
  6. Remove the cake from the oven and raise the heat to 225°C.
  7. Spread the coconut paste over the chocolate cake and bake at the center of the oven for a further 10 minutes until golden.
  8. Allow the cake to cool, then cut into pieces.
  9. Dust the cake withicing sugar before serving. Ideal for freezing.
